Tara’s Graduation Cake

 

Tara wanted a cake that was original and delicious.  The tiers were covered with buttercream icing and had tip 22 shell top borders and tip 140 extended bottom borders with strands of white pearls on each side.

The flavors of the four tiers were:  Kahlua Fudge with chocolate fudge mousse filling and a thin layer of red raspberry jelly; Pink Champagne with red raspberry buttercream filling; Strawberry Dream with cream cheese filling and Italian Wedding Cake with cream cheese filling topped with chopped black walnuts.  The Italian Wedding Cake and Strawberry Dream were covered with cream cheese buttercream and the Kahlua Fudge and Pink Champagne cakes were covered with regular white buttercream.

 

The large butterfly on top of each tier was molded from pink candy coating and dusted with luster dust.  The markings were done with tinted piping gel in various colors.  Pink and mauve lace butterflies made from gumpaste, dusted with luster dusts, steamed and silk dragon flies and butterflies were placed on each tier.

 

The topper featured silk butterflies, a dragon fly and gumpaste roses with silk greenery.

 

This four-tiered cake was designed to serve about 150 guests.
