CAKE OF THE MONTH – NOVEMBER 2004

This fall-themed birthday cake incorporates many of the beautiful fall colors one sees at this time of year. The cake is a 10-inch round Kahlua fudge with Bavarian cream filling and is covered with white buttercream icing.
The mums and berries are molded from tinted fondant with tylose added. They are then dusted with luster dusts to enhance the colors and steamed.
The leaves and script were cut from tinted fondant with tylose added, dusted with luster dusts to enhance the colors, and steamed. The leaves were veined and dried before being dusted with luster dusts.
The bottom extended border was piped with tip 140 and accented with a mum and leaves arrangement on the side.
